Ga kenkey (dokunu) is mainly made with fermented maize. The resulting dough after fermentation is further partially cooked and wrapped in banana leaves, corn husks, or foil. It will need to be steamed to get it ready for eating. It is a darling of Shito or Jollof sauce.
